Yield 1 quart
2.75 cups water
50 grams oolong tea leaves
1.75 cups sugar
Boil water and remove from heat, dump in the tea and don’t stir, just gently immerse the leaves in the hot water and let the mixture steep for 10 minutes.
Strain the hot tea on top of the sugar and stir gently until sugar is completely dissolved. The syrup lasts for weeks in the refrigerator.
