Roasted Pineapple Garnished with Vanilla Ice Cream and Asian Basil Leaf




1 whole pineapple, peeled and cored

2-4 Tbl brown sugar

2-3 Tbl butter

1 vanilla bean, split

1 or 2 pods star anise

Vanilla ice cream

Asian basil leaves for garnish (or substitute with fresh mint)


Preheat the oven to 400°.

In a 3-inch deep pan, melt butter and add sugar, split vanilla bean, and star anise. Add the pineapple and roast for 40 minutes until the fruit is a rich golden color, basting it frequently with the pan juices. If the sauce seems to be burning on the bottom of the pan, deglaze with a little water. To serve, cut 1 ½ inch thick rounds of pineapple and place each in the center of the plate. Top with scoop of vanilla ice cream, drizzle with the warm sauce and garnish with a fresh Asian basil or mint leaf.
