Shizuo Tsuji’s Teriyaki Sauce



7 Tbl sake

7 tsp. mirin

7 Tbl dark soy sauce

1 Tbl sugar


Bring sake, mirin, soy sauce, and sugar to a boil in a small saucepan over medium heat. Cook until sugar dissolves, stirring constantly. Let cool. Use at once or bottle and store in the refrigerator.
