Thi’s Marinade for Whole Roasted Fish or Salmon Steaks


4 stalks lemon grass, tender stems finely minced

3 large cloves garlic, minced

3 shallots, minced

1 small dry onion, sliced into thin half moons

3 1/2 oz ginger, minced

1/3 cup soy sauce

1/2 cup fish sauce

2 tbl sugar

1 tbl Vietnamese chili paste

3/4 cup white wine

2/3 cup shallot oil

1/3 cup vegetable oil

1 tsp salt

juice of two limes

2 scallions, minced


Thoroughly combine all ingredients. This marinade will keep for at least a week in the refrigerator.
