Thi’s Shrimp Marinade

This was a J&L customer favorite. It seems so simple but produced stupendous results.



3 large cloves garlic, minced

1 tsp ground black pepper

1½ tsp Vietnamese chili paste

1 tsp sugar

¼ cup soy

¼ cup oil, shallot oil preferred

juice of 1 to 2 limes

½ tsp salt

2 green onions, chopped fine


Marinate jumbo shrimp for several hours and cook on the grill; serve directly off the fire or at room temperature. The marinade keeps well in the refrigerator.
