Yuzu Koshō Vinaigrette

Yuzu koshō is a Japanese seasoning paste. It is made from chili peppers, grated yuzu rind, and salt, and is then allowed to ferment. I have written about it before in the Gazette. The following marinade recipe is adapted from Saveur Magazine.


7 Tbl sake

7 tsp. mirin

7 Tbl dark soy sauce

1 Tbl sugar
