Janie’s Mill, in East Central Illinois, is a family business committed to supplying high quality organic flours and grains. Most of the grains are grown on the family farm, just down the road from their mill. They sell USDA certified wheat flours, from high-protein bread flour to silky cake and pastry flours, rye, corn, oats, and buckwheat flours, as well as the ancient grains, einkorn and spelt. Some products are temporarily out of stock due to the increased demand. It seems baking bread (along with adopting a puppy and running) have seen a great resurgence as people cope with staying home.

On their website, Janie’s Mill has an excellent list of learning resources including videos, websites and baking blogs. They also include recipes that range from traditional corn bread to exotic baked goods like green tea-vanilla pound cake.

  • Anson Mills: A special product from this mill is Ni-Hachi Sobako, buckwheat flour strengthened by the addition of wheat flour so it can be used in making soba noodles.
  • King Arthur Flour: Along with a wide selection of flours, they sell mixes for bread, cookies, pancakes and scones, baking tools and an assortment of pans.

    Wow Lisa you’ve put out another awesome issue, full of great info and beautiful photography. Staying at home due to the pandemic led me to a new hobby I’m obsessed with — baking artisan sourdough bread with my own yeast starter. I’ll definite check out Janie’s mill.
