Sautéed Shrimp with Red Miso Butter Sauce

Miso butter can be as simple as combining equal parts soft butter with red or white miso paste. You can amplify the flavor with toasted sesame, minced scallions, grated ginger, or chili flakes. It’s good on rice, pasta, grilled fish, seared steak…just about anything. It works magic in this quick shrimp sauté.

Ingredients

1 pound peeled and cleaned large shrimp

¼ cup red miso paste

1 -2 Tbl water

3 Tbl Butter

1 tsp grated lemon rind

2 Tbl lemon juice

Instructions

Melt butter in a small saucepan and whisk in the miso paste, lemon rind and juice. Add 1-2 Tbl water to thin the sauce to desired consistency. Reserve.

Sauté shrimp just until they start to curl and turn pink. Add the reserved miso butter and finish cooking the shrimp in the sauce. Serve with white rice or on top of fresh pasta.
